A halból készült élelmiszerek fogyasztási szokásainak változása Magyarországon 2014 és 2021 között a szociodemográfiai jellemzők tükrében

Abstract

ÖSSZEFOGLALÁS A szerzők 2014-ben és 2021-ben végzett országos, reprezentatív felmérések alapján azt vizsgálták, mely szociodemográfiai tényezők voltak hatással a halból készült ételek kedveltségére. Eredményeik szerint a nem, az életkor, a végzettség és a jövedelem eltérő módon alakították a preferenciákat: a tengeri halfajokból és egészséges étrendbe illeszthető újszerű halételekből álló választék elsősorban a fiatalabb, magasabb végzettségű fogyasztók körében lett népszerűbb, míg az idősebbek továbbra is a tradicionális, főként édesvízi halakból készült ételeket részesítették előnyben. Eredményeik rámutatnak a célzott kommunikáció lehetőségeire a halfogyasztás népszerűsítésében. SUMMARY Background: Consumer preferences for fish-based dishes are shaped by a complex interplay of sociodemographic factors, such as age, gender, education, and income. These factors can significantly influence both the frequency of fish consumption and the choice of specific fish species or products. Objectives: This study aimed to identify the sociodemographic factors influencing the popularity of fourteen common fish species and ten fish-based dishes, and to analyse how these preferences changed among Hungarian consumers between 2014 and 2021. Materials and Methods: Data were collected through three quantitative, in-person consumer surveys in Hungary: two in September–October 2014 (n = 1026 each) and one in May–June 2021 (n = 1001). The 2014 surveys focused separately on species-specific knowledge and on fish product/dish preferences. All samples were stratified by age, sex, and NUTS-2 region to ensure national representativeness, with additional demographic data recorded. Closed questions were rated on a 5-point Likert scale. Statistical differences between groups were assessed using Pearson’s chi-square test (C.I. = 95%). Results and Discussion: Marine species and modern, health-conscious recipes were especially popular among younger and highly educated consumers, while traditional dishes remained more favoured by older respondents. In 2014, socio-demographic factors such as gender, age, education and income had significant influence on preferences, and although by 2021 these differences moderated in several areas, some earlier trends became even more pronounced. Younger, highly educated women were more likely to adopt Mediterranean-style or innovative fish dishes, whereas older and lower-income sociodemographic groups showed stronger attachment to freshwater products. Targeted communication and specialized product development, therefore, should emphasize health and novelty for the younger population, while at the same time highlighting familiarity, affordability and traditional values for older consumers.
