dc.description.abstractÖSSZEFOGLALÁS Jelen tanulmányban a szerzők két országosan reprezentatív, személyes kérdőíves felmérés alapján elemzik a halételek és halfajok kedveltségének, valamint a halfajismeret változását a magyar lakosság körében 2014 és 2021 között. A legismertebb halfajok ismertsége stabil maradt, a kevésbé ismert fajoké azonban bővült. A tengeri fajok élőhelyének besorolása pontosabbá vált, míg az édesvízieké enyhén romlott. A fogyasztói kedveltségi rangsorban a tradicionális halfajok megtartották előnyüket. Eredményeik szerint az egészségtudatos elkészítési módok népszerűsége jelentősen emelkedett, míg a hagyományos fogások kedveltsége enyhén csökkent, a rántott hal továbbra is vezető helyen áll. SUMMARY Background: Fisheries and aquaculture underpin global food security, with aquaculture output (51%) overtaking wild capture in 2022. Fish provide high-quality protein, long-chain omega-3 fatty acids (DHA, EPA) and essential micronutrients, but while EU consumption averages 23.5 kg per person, Hungarians consumed just 5.8 kg in 2023. Monitoring shifts in consumer knowledge of fish species and preferred fish products helps producers, processors and stakeholders respond to the everchanging demand. Objectives: This study maps changes in familiarity, preferences and habi- tat knowledge for fourteen popular fish species among Hungarian consumers between 2014 and 2021, and examines shifts in preferences for fish-based dishes. Materials and Methods: Two, nationally representative, in-person surveys were conducted in Hungary; firstly, in September–October 2014 (n = 1026) and then in May–June 2021 (n = 1001). Samples were stratified by age, sex and NUTS-2 regions, with additional demographics collected. The questionnaire combined open and closed items; closed questions used a 5-point Likert scale. Results and Discussion: Our results show that marine species classification accuracy improved, while freshwater species recognition declined. Traditional favourites (salmon, tuna, trout, carp) remained highly preferred; cod and mackerel gained ground, pangasius lost favour. Healthier preparations – fish salad, pasta dishes, steamed and grilled fish – rose in appeal, and canned fish moved above neutrality, whereas fish soup and sticks slipped and fried fish held steady. Overall familiarity with major species stayed strong, but growing interest in certain marine species and modern preparations signals evolving tastes. The decline in freshwater habitat knowledge points to the need for targeted education, while stable classics alongside demand for healthier, convenient dishes offer opportunities for producers.
