Abstract
SUMMARY In this review article the authors highlight the contamination of raw milk and dairy products with different xenobiotics, and the food safety significance of the related contaminants. Concerning the chemical contaminants, first the milk hygiene significance of the veterinary drug residues is discussed, focusing on the public health aspects and the inhibitory effects against starter cultures. Then, the food safety significance of pesticide residues and different environmental contaminants, such as heavy metals and dioxins are outlined. In the following, the authors discuss the milk hygiene significance of mycotoxins, including the problem of the aflatoxin contamination of raw milk in Central Europe probably due to climatic changes, and the food safety aspects of biogenic amines and the presence of radioactive substances in the raw milk and dairy products.
