Halfajok és halételek – a magyar fogyasztók tudásszintjének és preferenciáinak változása 2014 és 2021 között reprezentatív kutatás alapján

ÖSSZEFOGLALÁS
Jelen tanulmányban a szerzők két országosan reprezentatív, személyes kérdőíves felmérés alapján elemzik a halételek és halfajok kedveltségének, valamint a
halfajismeret változását a magyar lakosság körében 2014 és 2021 között. A legismertebb halfajok ismertsége stabil maradt, a kevésbé ismert fajoké azonban
bővült. A tengeri fajok élőhelyének besorolása pontosabbá vált, míg az édesvízieké
enyhén romlott. A fogyasztói kedveltségi rangsorban a tradicionális halfajok megtartották előnyüket. Eredményeik szerint az egészségtudatos elkészítési módok
népszerűsége jelentősen emelkedett, míg a hagyományos fogások kedveltsége
enyhén csökkent, a rántott hal továbbra is vezető helyen áll.
SUMMARY
Background: Fisheries and aquaculture underpin global food security, with aquaculture output (51%) overtaking wild capture in 2022. Fish provide high-quality
protein, long-chain omega-3 fatty acids (DHA, EPA) and essential micronutrients,
but while EU consumption averages 23.5 kg per person, Hungarians consumed
just 5.8 kg in 2023. Monitoring shifts in consumer knowledge of fish species and
preferred fish products helps producers, processors and stakeholders respond
to the everchanging demand.
Objectives: This study maps changes in familiarity, preferences and habi-
tat knowledge for fourteen popular fish species among Hungarian consumers
between 2014 and 2021, and examines shifts in preferences for fish-based dishes.
Materials and Methods: Two, nationally representative, in-person surveys were
conducted in Hungary; firstly, in September–October 2014 (n = 1026) and then in
May–June 2021 (n = 1001). Samples were stratified by age, sex and NUTS-2 regions,
with additional demographics collected. The questionnaire combined open and
closed items; closed questions used a 5-point Likert scale.
Results and Discussion: Our results show that marine species classification
accuracy improved, while freshwater species recognition declined. Traditional
favourites (salmon, tuna, trout, carp) remained highly preferred; cod and mackerel
gained ground, pangasius lost favour. Healthier preparations – fish salad, pasta
dishes, steamed and grilled fish – rose in appeal, and canned fish moved above
neutrality, whereas fish soup and sticks slipped and fried fish held steady. Overall familiarity with major species stayed strong, but growing interest in certain
marine species and modern preparations signals evolving tastes. The decline in
freshwater habitat knowledge points to the need for targeted education, while
stable classics alongside demand for healthier, convenient dishes offer opportunities for producers.
Az állati tetemen megjelenő kétszárnyúak (Diptera) és alkalmazásuk az igazságügyi rovartanban : Irodalmi összefoglaló

ÖSSZEFOGLALÁS
A szerző szakirodalmi adatok alapján bemutatja az állati tetemen megjelenő
kétszárnyúakat (Diptera) és azok alkalmazását az igazságügyi rovartanban. Az állati
tetem baktériumspektrumának változásai a gázhalmazállapotú bomlástermékek
növekvő koncentrációjával jár. Ez kémiai üzenet a lebomlási folyamat során elsőként
megjelenő, a bomlási illatanyagokra érzékeny fémeslegyek (Diptera: Calliphoridae)
számára, amelyek az igazságügyi rovartani vizsgálatok indikátor fajai. Az igazságügyi
rovartan vizsgálati módszertana tekintetében a sertéstetem az emberi holttesten
végbemenő lebomlási folyamatok elemzésének legalkalmasabb modellszervezete.
Az állatok ellen elkövetett bűncselekmények vizsgálatában a rovartani vizsgálati
módszernek a halál időpontjának megállapításában van kiemelt jelentősége.
SUMMARY
The change of the bacterial spectrum at in the animal carcass is indicative of
the initial phase of the decomposition process, accompained by an escalating
concentration of various gaseous elements. These are hydrogen sulphide, carbon
dioxid, methane, ammonium, sulfure dioxid and hydrogen. This phenomenon
function as a chemical signal that is perceived by species during the decomposition process. The most sensitive species to decomposition odours are flies (Diptera). The flies are capable of acting as biological vector for pathogens. A notable
example of this is the house fly, Musca domestica L (Diptera: Muscidae), which
is able to breed in substantial numbers on livestock farms due to its remarkable
reproductive capacity. As a synantropic fly species, it is a mechanical vector for
various pathogens and therefore poses a similar threat to humans and animals.
Several species of other fly families of members, such as the metal flies (Diptera:
Calliphoridae), are also breeding on livestock farms. The biology of these fly species
differs from that of members of the family Muscidae. These flies are not only found
on live animals, but also on animal carcass, where they can access a rich source
of nutrients. For this reason, flies play an important role in forensic entomology.
Forensic methodology utilises pig carcasses as a model for human cadavers, as
they are similar in terms of decomposition processes. The investigation of crime
againts animals requires the same methods as for human cases. However, the
features of the animal species in question must be taken into account. In the
literature review, I present the insect examination options for crime investigation
available today. It is important note, however, that these examinations can be
used effectively in conjunction with many other instrumental measurements. For
example include analytical chemical and genetical analyses.
A kvórumérzékelés szerepe az antimikrobiális rezisztencia populációdinamikájában

ÖSSZEFOGLALÁS
Az antimikrobiális rezisztencia kialakulása nem kizárólag egyedi genetikai változások eredménye, hanem komplex populációdinamikai és evolúciós folyamatok következménye. Ebben az irodalmi áttekintésben a szerzők bemutatják a
kvórumérzékelés szerepét a baktériumpopulációk adaptív válaszainak szabályozásában, különös tekintettel az antibiotikum-expozícióra adott kollektív válaszokra.
Elemzik a kvórumérzékelés és az antimikrobiális rezisztencia közötti összefüggéseket, valamint a kvórumérzékelés-gátlás lehetőségeit és evolúciós kockázatait
állatorvosi és One Health szemléletben.
SUMMARY
Antimicrobial resistance represents a major global challenge in both human and
veterinary medicine, and its development cannot be explained solely by individual genetic changes such as point mutations or horizontal gene transfer events.
Increasing evidence indicates that antimicrobial resistance is driven by complex
evolutionary and population dynamic processes in which bacterial communities
respond collectively to antibiotic-induced selection pressure. This review provides
an integrated overview of the population-level mechanisms shaping bacterial
adaptation, with particular emphasis on the role of quorum sensing as a central
regulatory system coordinating collective responses.
Quorum sensing is discussed not as a direct resistance mechanism but as
a population-level organizational principle influencing stress responses, efflux
regulation, horizontal gene transfer, and the maintenance of resistant and tolerant subpopulations. The interaction between quorum sensing and antimicrobial
exposure is examined from an evolutionary perspective, highlighting how population density, environmental heterogeneity, and regulatory network integration
modulate the rate and trajectory of resistance emergence.
The concept of quorum sensing inhibition is critically evaluated as a potential
intervention strategy rather than a selection-free alternative, with particular
attention to adaptive bypass mechanisms and co-selection processes. Special
focus is placed on animal production settings, where high cell density, recurrent
antimicrobial use, and complex microbial communities create unique ecological
conditions favoring population-level adaptation. The findings are framed within
a veterinary and One Health perspective, emphasizing the need for integrated,
long-term population dynamic approaches to better understand and mitigate
antimicrobial resistance.
A digitális patológia és állatorvosi alkalmazása : Irodalmi összefoglaló

ÖSSZEFOGLALÁS
A szerzők irodalmi adatok és saját tapasztalataik alapján összefoglalják a digitális patológiával kapcsolatos legfontosabb ismereteket. Áttekintést nyújtanak
a tudományterület fejlődéséről, a hozzá kapcsolódó legfontosabb fogalmakról,
az attól elválaszthatatlan metszetszkennerekről, mesterséges intelligenciáról
és digitális képelemzésről, továbbá felhasználási lehetőségeiről. Ismertetésre
kerülnek a diagnosztikai, kutatási és oktatási alkalmazásának lehetőségei is. Ezen
kívül egy külön fejezetben bemutatják a technológia megoldandó problémáit és
követelményeit, valamint röviden összefoglalják a módszertanával megvalósított
saját kutatásaikat is.
SUMMARY
Digital pathology refers to the visualization and examination of traditional histopathological slides on a monitor after digitization. Its revolution started with the
commercialization of slide scanners. With these instruments glass slides can be
converted into high-resolution digital whole slide images that can be examined
with digital image analysis softwares. Their purpose is to increase the amount
and quality of data that can be extracted from histological samples, as well as
their quantitative measurement. With its methodology a more objective pathology discipline can be realized. These softwares learn and improve their perfor-
mance using machine learning. In diagnostics, digital pathology can be used to
accelerate workflows, perform remote work, consult, and replace semi-quantitative
evaluations. Its research use is an important aspect, since the tissue assessment
of morphological and molecular visualization procedures, or where applicable, its
evaluation based on quantitative characterization is subjective and often difficult
to repeat. The numerical data obtained are statistically more feasible. Educational
activity is more interactive, there is no need for microscopes or slides, and the
system is also suitable for exams. The problems of digital pathology include the
lack of a standardized digital file format, significant costs and data management
burdens, as well as the unknown decision-making method of the most effective
artificial intelligence systems, which drawbacks need to be solved in the future.
In our own studies, using economically important viral pig diseases we analyzed
the associations between digitally quantified infected cell or inflammatory cell
counts and manual scorings and viral loads measured by qPCR.
Vásárlói szokások és preferenciák elemzése a kutyák számára készült takarmánykiegészítők és gyógyhatású készítmények piacán

ÖSSZEFOGLALÁS
A kutyáknak szánt takarmánykiegészítők, vitaminok, fitoterápiás és gyógyhatású
készítmények piaca jelentős fejlődést mutatott az elmúlt években, azonban
még nem érte el a benne rejlő potenciál maximumát. A szerzők célja ezen ter mékek piacának és a vásárlói szokások, preferenciák felmérése volt. Összesen
355 kitöltött kérdőív 10 kérdése és azok elemzése kellően átfogó képet adott a
vizsgált területről. A kapott adatok alapján a válaszok 80%-a 6 kategóriába tar tozó terméktípusra érkezett. A válaszok és az elemzések segítséget nyújtanak
az új termékkörök fejlesztésében és piacon történő elindításában, továbbá üzleti
lehetőségeket tárnak fel gyártók, forgalmazók és állatorvosok számára egyaránt.
SUMMARY
Background: Information on feed supplements, including the market and cus tomers for various vitamin, phytotherapeutic and medicinal products, is very
scarce. The trade of these products has grown by leaps and bounds in recent
years, but there is insufficient information available on the size of the market
and on customer habits and preferences. There is a relatively large amount of
information available on the Hungarian pet food market, both on the size of the
market and its distribution between the different trade channels and product
categories, but this only covers the food market.
Objectives: The aim of my work is to assess the market and customer habits
and preferences of dog food supplements, vitamins, phytotherapeutical and
medicinal products in Hungary.
Materials and Methods: As a method, we used a classical questionnaire data
collection in 49 pet food and accessories shops covering the most extensive area
of Hungary. The 10 questions of the 355 completed questionnaires and their ana lysis provide a sufficiently comprehensive picture of the buying and dog-owning
habits of this market and of dog owners.
Results and Discussion: Based on the received data, 80% of the responses
pertained to product types belonging to 6 categories. For 80% of customers,
the most important factor is the composition of the feed supplement, and the
vast majority of them choose phytotherapeutics and other naturally derived feed
supplements. The answers and the analyses will help to develop and launch new
product ranges and will also identify business opportunities for manufacturers,
distributors and, in particular, veterinarians. It can provide answers to the ques tion of which price range and which type of products are worth launching on the
Hungarian market or developing existing product ranges. In order for a manufa cturer or distributor to make the most of this growth and for veterinarians to be
more than passive observers of this market growth, it is essential to understand
the market and the habits and preferences of consumers.
