Development of Vegetable Protein-Based Nuggets with High Essential Amino Acid Level for Vegetarian and Vegan Consumers

Abstract

The aim of this study was to develop and evaluate the production of pea protein-based nuggets which were treated with microbial transglutaminase and were able to obtain a high essential amino acid level.
